classic meat loaf with roasted vegetables

Ingredients
- 4 slices white bread, trimmed and torn into pieces
- 4 tablespoons worcestershire sauce
- 1 cup onion, finely chopped
- 1/3 cup ketchup
- 1 tablespoon ketchup
- 1 tablespoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 1/2 pounds ground beef
- 14 1/ ounces beef broth
- 1 large sweet potato, peeled and quartered
- 2 - potatoes, peeled and quartered
- 4 - carrots, peeled and sliced
- 2 - eggs

Step 1Preheat oven to 375.

Step 2Mash bread, eggs and 3 tablespoons worcestershire sauce in large bowl until smooth paste forms.

Step 3Mix in onion, 1/3 cup ketchup, garlic powder, salt and pepper.

Step 4Add beef and mix thoroughly.

Step 5Mound meat mixture in 13x9x2-inch baking pan, shaping into 8x4-inch loaf.

Step 6Spread remaining 1 tablespoon ketchup over meat loaf.

Step 7Pour broth and remaining 1 tablespoon worcestershire sauce into pan around meat loaf.

Step 8Arrange vegetables around meat loaf.

Step 9Cover pan with foil.

Step 10Bake 45 minutes.

Step 11Uncover; bake until vegetables are tender and meat loaf is cooked through, about 35 minutes.

Step 12Using spatula, transfer meat loaf to platter.

Step 13Surround with vegetables; spoon some pan juices over.
