white bread, trimmed and torn into pieces
4 Tbsp
worcestershire sauce
1 c
onion, finely chopped
1/3 c
1 Tbsp
1 Tbsp
garlic powder
1/2 tsp
1/2 tsp
1 1/2 lb
ground beef
14 1/ oz
beef broth
1 large
sweet potato, peeled and quartered
potatoes, peeled and quartered
carrots, peeled and sliced

How to Make Classic Meat Loaf with Roasted Vegetables


  • 1Preheat oven to 375.
  • 2Mash bread, eggs and 3 tablespoons worcestershire sauce in large bowl until smooth paste forms.
  • 3Mix in onion, 1/3 cup ketchup, garlic powder, salt and pepper.
  • 4Add beef and mix thoroughly.
  • 5Mound meat mixture in 13x9x2-inch baking pan, shaping into 8x4-inch loaf.
  • 6Spread remaining 1 tablespoon ketchup over meat loaf.
  • 7Pour broth and remaining 1 tablespoon worcestershire sauce into pan around meat loaf.
  • 8Arrange vegetables around meat loaf.
  • 9Cover pan with foil.
  • 10Bake 45 minutes.
  • 11Uncover; bake until vegetables are tender and meat loaf is cooked through, about 35 minutes.
  • 12Using spatula, transfer meat loaf to platter.
  • 13Surround with vegetables; spoon some pan juices over.
