patsy's chuck roast

I made this chuck roast for Sunday dinner a few weeks ago,everyone commented how tender and delicious it was. It's so easy and so tasty! Most of the work is braising it in the oven. Try to use a good thick roast. Of course,this is great served with mashed potatoes.

- - salt
- - black pepper
- - garlic powder
- - vegetable oil
- - large,thick chuck roast
- - 3-4 t. flour
- - 3-4 t butter
- - 2 c beef broth
How To Make patsy's chuck roast

Step 1Season roast well with salt,pepper and garlic. Heat a heavy skillet,add oil.When it's hot, brown roast on both sides. Remove from skillet,if browned pieces left in pan aren't burned,make the sauce in the same pan,if burned use a different pan. Melt butter,add flour and stir and cook 2-3 mins. Add broth and cook a few mins,season to taste with salt,pepper and garlic. Place roast in a pan with a tight fitting top,pour sauce over roast,cover with foil and cover. Bake 300 degrees for 6 hours until roast is so tender you can break it apart with a spoon. Sauce will be browned and slightly thick,you can thicken it more if you like by making a slurry of butter and flour. If possible,let roast sit overnight,scrape away fat and reheat till hot. Taste better the next day.
