chocolate chili
My husband's recipe. He adds unsweetened chocolate to give the chili a great richness.

Ingredients
- 2 pounds ground beef, pork or turkey
- 1 stick butter
- 3 - garlic cloves, minced
- 1 pound mushrooms, chopped
- 1 - each of red, yellow and orange bell pepper, sliced or diced
- 1 large red onion, sliced
- 2 cans 14.5 oz. diced tomatoes, undrained
- 2 cups water
- 1 can 15.15.5 oz. dark red kidney beans, undrained
- 1 can 15.5 oz. light red kidney beans, undrained
- 2 ounces (2 squares) unsweetened chocolate
- 1/2 cup chili powder
- 1/2 cup granulated sugar
- 1/4 cup parsley flakes
- 1/4 cup ground cumin
- 1 tablespoon ground mustard
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon cayenne pepper
- 1 - dash or two of tabasco sauce (or to taste)
How To Make chocolate chili

Step 1In large skillet, over medium heat, cook meat until browned, stirring often. Drain well; set aside.

Step 2Add butter to large stockpot. Turn heat to low-medium.

Step 3Add garlic, mushrooms, onion and bell peppers; cook until translucent, stirring constantly, about 5 min.

Step 4Add reserved meat to stockpot, folding in gently.

Step 5Add remaining ingredients, in order given, stirring well after each addition.

Step 6Heat to boiling. Reduce heat to simmer and cook, uncovered for at least 1 hour (I like to leave it on the stove and simmer for several hours.) Stir occasionally.
