dry sherry
1 Tbsp
soy sauce
1 Tbsp
cornstarch
1/2 tsp
sugar

oil
1/2 tsp
black pepper

oyster sauce

broccoli florets
1 1/2 c
beef broth

baby corn spears

snow peas

scallion, chopped

carrots, cut into match stick sized pieces

How to Make Chinese Beef Stir-Fry with Vegetables

Step-by-Step

  • 1Marinate the sirloin at room temperature in a mixture of the sherry, soy sauce, half the cornstarch, sugar, 1/2 teaspoon of the oil, pepper and garlic for one hour.
  • 2Heat a tablespoon of the remaining oil in a wok over high heat.
  • 3Stir-fry beef quickly, until the meat is medium rare.
  • 4Remove and set aside.
  • 5Mix the remaining cornstarch with the oyster sauce.
  • 6Reheat the wok with the remaining oil.
  • 7Add the broccoli and carrots; stir-fry for 30 seconds.
  • 8Add the broth, cover the wok, and steam for approximately one minute or until the vegetables are tender-crisp.
  • 9Add the corn, snow peas, scallion, beef and oyster-cornstarch mixture.
  • 10Heat quickly, until the sauce is clear and thickened.
  • 11Serve immediately.
