Ingredients

  • 1 pound sirloin tips cut into 1 inch slices
  • 1 tablespoon dry sherry
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch
  • 1/2 teaspoon sugar
  • 6 1/2 teaspoons oil
  • 1/2 teaspoon black pepper
  • 2 - garlic cloves, crushed
  • 1 tablespoon oyster sauce
  • 2 cups broccoli florets
  • 1 1/2 cups beef broth
  • 8 - baby corn spears
  • 20 - snow peas
  • 1 - scallion, chopped
  • 2 - carrots, cut into match stick sized pieces

How To Make chinese beef stir-fry with vegetables

  • Step 1
    Marinate the sirloin at room temperature in a mixture of the sherry, soy sauce, half the cornstarch, sugar, 1/2 teaspoon of the oil, pepper and garlic for one hour.
  • Step 2
    Heat a tablespoon of the remaining oil in a wok over high heat.
  • Step 3
    Stir-fry beef quickly, until the meat is medium rare.
  • Step 4
    Remove and set aside.
  • Step 5
    Mix the remaining cornstarch with the oyster sauce.
  • Step 6
    Reheat the wok with the remaining oil.
  • Step 7
    Add the broccoli and carrots; stir-fry for 30 seconds.
  • Step 8
    Add the broth, cover the wok, and steam for approximately one minute or until the vegetables are tender-crisp.
  • Step 9
    Add the corn, snow peas, scallion, beef and oyster-cornstarch mixture.
  • Step 10
    Heat quickly, until the sauce is clear and thickened.
  • Step 11
    Serve immediately.
