Ingredients
- 1 pound sirloin tips cut into 1 inch slices
- 1 tablespoon dry sherry
- 1 tablespoon soy sauce
- 1 tablespoon cornstarch
- 1/2 teaspoon sugar
- 6 1/2 teaspoons oil
- 1/2 teaspoon black pepper
- 2 - garlic cloves, crushed
- 1 tablespoon oyster sauce
- 2 cups broccoli florets
- 1 1/2 cups beef broth
- 8 - baby corn spears
- 20 - snow peas
- 1 - scallion, chopped
- 2 - carrots, cut into match stick sized pieces
How To Make chinese beef stir-fry with vegetables

Step 1Marinate the sirloin at room temperature in a mixture of the sherry, soy sauce, half the cornstarch, sugar, 1/2 teaspoon of the oil, pepper and garlic for one hour.

Step 2Heat a tablespoon of the remaining oil in a wok over high heat.

Step 3Stir-fry beef quickly, until the meat is medium rare.

Step 4Remove and set aside.

Step 5Mix the remaining cornstarch with the oyster sauce.

Step 6Reheat the wok with the remaining oil.

Step 7Add the broccoli and carrots; stir-fry for 30 seconds.

Step 8Add the broth, cover the wok, and steam for approximately one minute or until the vegetables are tender-crisp.

Step 9Add the corn, snow peas, scallion, beef and oyster-cornstarch mixture.

Step 10Heat quickly, until the sauce is clear and thickened.
