Ingredients

  • 1 lb
    sirloin tips cut into 1 inch slices
  • 1 Tbsp
    dry sherry
  • 1 Tbsp
    soy sauce
  • 1 Tbsp
    cornstarch
  • 1/2 tsp
    sugar
  • 6 1/2 tsp
    oil
  • 1/2 tsp
    black pepper
  • 2
    garlic cloves, crushed
  • 1 Tbsp
    oyster sauce
  • 2 c
    broccoli florets
  • 1 1/2 c
    beef broth
  • 8
    baby corn spears
  • 20
    snow peas
  • 1
    scallion, chopped
  • 2
    carrots, cut into match stick sized pieces

How to Make Chinese Beef Stir-Fry with Vegetables

Step-by-Step

  1. Marinate the sirloin at room temperature in a mixture of the sherry, soy sauce, half the cornstarch, sugar, 1/2 teaspoon of the oil, pepper and garlic for one hour.
  2. Heat a tablespoon of the remaining oil in a wok over high heat.
  3. Stir-fry beef quickly, until the meat is medium rare.
  4. Remove and set aside.
  5. Mix the remaining cornstarch with the oyster sauce.
  6. Reheat the wok with the remaining oil.
  7. Add the broccoli and carrots; stir-fry for 30 seconds.
  8. Add the broth, cover the wok, and steam for approximately one minute or until the vegetables are tender-crisp.
  9. Add the corn, snow peas, scallion, beef and oyster-cornstarch mixture.
  10. Heat quickly, until the sauce is clear and thickened.
  11. Serve immediately.
