chilled marinated steak
This cold rare steak is perfect on those sizzling summer days. It is so good over salad greens. We often prepare this as an "extra" steak when grilling other steaks or chicken, for use later in the week.

Ingredients
- 1 large garlic clove, crushed
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon dry mustard
- 1 1/2 tablespoons blue cheese crumbled
- 2 teaspoons instant coffee
- 2 tablespoons dry vermouth
- 1/2 cup olive oil
- 3 pounds sirloin steak, 2 inch thick
How To Make chilled marinated steak

Step 1In a bowl, combine the marinade ingredients (garlic through olive oil). Whisk to thoroughly mix until it forms a smooth paste

Step 2Rub the marinade on both sides of the steak and marinate at room temperature for 2 hours.

Step 3Grill steak to rare. Brush with the marinade while grilling. Let cool to room temperature, then wrap in foil and refrigerate overnight. This will make the flavor more pronounced.

Step 4Unwrap steak, slice thinly to serve. This is excellent over salad greens.
