Ingredients

  • 1.5 lb
    boneless beef chuck roast
  • 1 Tbsp
    olive oil
  • 1 c
    chunky salsa
  • 2 Tbsp
    brown sugar, firmly packed
  • 1 Tbsp
    soy sauce
  • 1
    garlic clove, crushed
  • ·
    cilantro, fresh and chopped
  • 2 Tbsp
    fresh lime juice
  • 2 c
    hot cooked rice

How to Make Chili Salsa Beef

Step-by-Step

  1. Trim fat from beef.
  2. Cut beef into 1 1/4" pieces, in dutch oven, heat oil over medium heat until hot.
  3. Add beef (half at a time) and brown evenly, stirring occasionally.
  4. Pour off drippings.
  5. Stir salsa, sugar, soy sauce and garlic into beef.
  6. Bring to a boil; reduce heat to low.
  7. Cover tight and simmer 1 hour.
  8. Remove cover; continue cooking, uncovered 30 minutes longer or until beef is tender.
  9. Remove from heat; stir in chopped cilantro and lime juice.
  10. Spoon beef mixture over rice.
  11. Garnish with cilantro and lime quarters if desired.
