Ingredients
- 1.5 pounds boneless beef chuck roast
- 1 tablespoon olive oil
- 1 cup chunky salsa
- 2 tablespoons brown sugar, firmly packed
- 1 tablespoon soy sauce
- 1 - garlic clove, crushed
- - cilantro, fresh and chopped
- 2 tablespoons fresh lime juice
- 2 cups hot cooked rice
How To Make chili salsa beef

Step 1Trim fat from beef.

Step 2Cut beef into 1 1/4\" pieces, in dutch oven, heat oil over medium heat until hot.

Step 3Add beef (half at a time) and brown evenly, stirring occasionally.

Step 4Pour off drippings.

Step 5Stir salsa, sugar, soy sauce and garlic into beef.

Step 6Bring to a boil; reduce heat to low.

Step 7Cover tight and simmer 1 hour.

Step 8Remove cover; continue cooking, uncovered 30 minutes longer or until beef is tender.

Step 9Remove from heat; stir in chopped cilantro and lime juice.

Step 10Spoon beef mixture over rice.

Step 11Garnish with cilantro and lime quarters if desired.
