boneless beef chuck roast
1 Tbsp
olive oil
1 c
chunky salsa
2 Tbsp
brown sugar, firmly packed
1 Tbsp
soy sauce
garlic clove, crushed
cilantro, fresh and chopped
2 Tbsp
fresh lime juice
2 c
hot cooked rice

How to Make Chili Salsa Beef


  • 1Trim fat from beef.
  • 2Cut beef into 1 1/4" pieces, in dutch oven, heat oil over medium heat until hot.
  • 3Add beef (half at a time) and brown evenly, stirring occasionally.
  • 4Pour off drippings.
  • 5Stir salsa, sugar, soy sauce and garlic into beef.
  • 6Bring to a boil; reduce heat to low.
  • 7Cover tight and simmer 1 hour.
  • 8Remove cover; continue cooking, uncovered 30 minutes longer or until beef is tender.
  • 9Remove from heat; stir in chopped cilantro and lime juice.
  • 10Spoon beef mixture over rice.
  • 11Garnish with cilantro and lime quarters if desired.
