How To Make chili - no tomatoes
-
Step 1Cook meat in a dutch oven, do not brown. Skim grease. Add water and bay leaves. Simmer for 30 minutes. Remove bay leaves.
-
Step 2Continue simmering for 1-2 hours. Skim grease. Add remaining spices, cover and simmer 30 minutes longer.
-
Step 3Combine flour and corn meal. Mix in enough water to make a thin paste. Stir into chili and raise heat to a boil. Cook to desired thickness. You can add more corn meal if chili is too thin, add water if chili is too thick. Enjoy!
-
Step 4If you so choose you can serve with tortillas or chips, garnish with chopped onion, grated cheese, jalapeno and sour cream. Make Frito pie to go: Open a small bag of Fritos and spoon chili over. Add cheese and onions and other toppings as you desire, eat with fork right out of the bag! YUMMY!!
