This is very different recipe from most I've seen for chili. My favorite chili!

Ingredients

  • 3 pounds ground meat - beef or venison, you can also use cubed meat and cook it down until it shreds apart.
  • 4 cups water
  • 2 - bay leaves
  • 6 tablespoons chili powder
  • 1 tablespoon salt
  • 10 cloves garlic, chopped very finely
  • 1 teaspoon ground cumin
  • 1 teaspoon oregano, dried
  • 1 teaspoon cayenne pepper, more or less. use to your taste.
  • 1/2 teaspoon black pepper
  • 1 tablespoon sugar
  • 3 tablespoons paprika
  • 3 tablespoons flour
  • 4 to 6 tablespoons corn meal
  • NOT PART OF ORIGINAL RECIPE
  • 1/4 cup dried chopped onions
  • 2 tablespoons cocoa
  • 1 teaspoon cinnamon

How To Make chili - no tomatoes

  • Step 1
    Cook meat in a dutch oven, do not brown. Skim grease. Add water and bay leaves. Simmer for 30 minutes. Remove bay leaves.
  • Step 2
    Continue simmering for 1-2 hours. Skim grease. Add remaining spices, cover and simmer 30 minutes longer.
  • Step 3
    Combine flour and corn meal. Mix in enough water to make a thin paste. Stir into chili and raise heat to a boil. Cook to desired thickness. You can add more corn meal if chili is too thin, add water if chili is too thick. Enjoy!
  • Step 4
    If you so choose you can serve with tortillas or chips, garnish with chopped onion, grated cheese, jalapeno and sour cream. Make Frito pie to go: Open a small bag of Fritos and spoon chili over. Add cheese and onions and other toppings as you desire, eat with fork right out of the bag! YUMMY!!
