My mother made chili similar to this when I was young. We were from a small town, so chili itself was considered an 'international dish' when compared to the typical fare of fried chicken and my Aunt Mollie's potatos augratin...ANYway, this is the recipe that has evolved after many years of adaptation to our taste buds. It is THE recipe that every young bride whose young hubby has been a guest at our table. I hope you enjoy it as much as we have enjoyed serving it.

Ingredients

  • 3 pounds low fat ground beef...93/7 is great!
  • 1 large onion (white or yellow) chopped
  • 2 - jalapenos, fresh
  • 1 can tomatos with chilis (rotel)
  • 2 cans chili beans (ranch style original)
  • 1 can black beans
  • 2 cans kidney beans, dark
  • 1 teaspoon granulated garlic (not garlic powder)
  • 1 teaspoon granulated onion (not onion powder)
  • 2 tablespoons chili powder
  • 1 tablespoon tony chacere's cajun seasoning
  • 5 cloves garlic, minced
  • 1 - can beef consumme (not beef broth)
  • - cheese
  • - sour cream
  • - elbow macaroni, cooked -or-
  • - tortilla chips

How To Make chili - man pleasin stuff...

  • Step 1
    Deep, heavy-duty pot works well with this recipe.
  • Step 2
    Over medium/high heat, brown your ground meat with onion, garlic and seasonings.
  • Step 3
    Put your largest collander in your sink. Add black beans and kidney beans and drain your beans. DO NOT RINSE YOUR CHILI BEANS :-) Rinse with water - but do not wash them completely.
  • Step 4
    When the onions are clear, add rinsed beans, your chili beans with gravy, tomatoes, beef consumme.
  • Step 5
    I cook this for only 30 minutes - then serve it with cheeses over either macaroni or tortilla chips.
