Ingredients For chili con queso casserole

  • 4 cups corn chips, coarsely crushed
  • 1 t. chopped mild green chilies, or jalapeno peppers
  • 8 oz. shredded cheddar cheese
  • 1 t. margarine, melted
  • 2 cans chili con carne with beans, regular or hot (15 oz. each)
  • 1 1/4 cup chopped onion
  • 2 t. chopped scallions

How To Make chili con queso casserole

    Preheat oven to 400. Grease a 1 1/2 quart baking dish. Sauté onion in butter until transparent, remove from heat and stir in scallions and peppers.

    . Line the bottom of the baking dish with crushed corn chips.. Carefully spread half the chili over the chips, layer half the onion mixture and 1 1/2 cups cheese. Repeat chili and onion mixture. Sprinkle remaining 1/2 cup shredded cheese on top of the casserole. Bake for 20 to 25 minutes. Serves 6 to 8
