chile relleno casserole with beef
I love chiles rellenos but hubby always says "where's the meat." Now that I've added a layer of ground beef to a basic chiles rellenos recipe it's his favorite.

Ingredients
- BEEF LAYER
- 1/2 pound ground beef
- 1/2 onion, chopped
- 2 teaspoons chili powder
- 1/2 teaspoon ground cumin
- salt and pepper
- 1/2 teaspoon dried oregano
- CHILE LAYER
- 1/2 can (27 ounce) whole green chiles, freeze the other half or double recipe
- 3 or 4 sticks mozzarella cheese, cut in half
- TOPPING
- 4 eggs
- 1 cup milk
- 1/4 cup flour
- 1/2 teaspoon baking powder
- 1 cup grated cheddar cheese
How To Make chile relleno casserole with beef

Step 1Preheat oven to 375, grease an 8x8 pan. The egg mixture rises so be sure to have a deep pan.

Step 2brown ground beef, add onion and saute until transparent

Step 3Add spices then layer in bottom of pan

Step 4Place 1/2 of a mozzarella stick in each green chili and lay them over the beef. I usually use 6 to 8 chiles. The remainder of the can freezes well. Or double the recipe!

Step 5Mix the topping ingredients except the cheddar cheese. Pour over the chiles. Sprinkle with the cheddar.

Step 6Cover with foil and bake for 30 minutes. Be sure there is room for the casserole to rise while baking without touching the foil. Remove foil and bake another 15 minutes.
