Ingredients
- 1 pound lean ground beef
- 1 - onion, chopped
- 1 - jalapeno peppers
- 1 can enchilada sauce
- 1 can black beans, drained
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1 box corn muffin mix
- 1 package mexican style shredded cheese
How To Make cheesey cornbread casserole

Step 1Heat Oven to 350F

Step 2Brown meat with onions and peppers. Stir in the next 4 ingredients; Cook and stir 3 minutes or until heated through. Spoon into 13x9 baking dish.

Step 3Prepare muffin batter as directed on package; You can either stir the cheese into the batter or do like I do and just put it on top. Spread it over the meat mixture.

Step 4Bake 20 minutes or until toothpick inserted in the center of the cornbread topping comes out clean.
