1 lblean ground beef
1 can(s)enchilada sauce
1 can(s)black beans, drained
1 tspgarlic powder
1 boxcorn muffin mix
1 pkgmexican style shredded cheese
How to Make Cheesey Cornbread Casserole
- Heat Oven to 350F
- Brown meat with onions and peppers. Stir in the next 4 ingredients; Cook and stir 3 minutes or until heated through. Spoon into 13x9 baking dish.
- Prepare muffin batter as directed on package; You can either stir the cheese into the batter or do like I do and just put it on top. Spread it over the meat mixture.
- Bake 20 minutes or until toothpick inserted in the center of the cornbread topping comes out clean.
