Ingredients For cheesey cornbread casserole

  • 1 lb
    lean ground beef
  • 1
    onion, chopped
  • 1
    jalapeno peppers
  • 1 can
    enchilada sauce
  • 1 can
    black beans, drained
  • 1 tsp
    garlic powder
  • 1 tsp
  • 1 box
    corn muffin mix
  • 1 pkg
    mexican style shredded cheese

How To Make cheesey cornbread casserole

    Heat Oven to 350F
  • 2
    Brown meat with onions and peppers. Stir in the next 4 ingredients; Cook and stir 3 minutes or until heated through. Spoon into 13x9 baking dish.

    Prepare muffin batter as directed on package; You can either stir the cheese into the batter or do like I do and just put it on top. Spread it over the meat mixture.

    Bake 20 minutes or until toothpick inserted in the center of the cornbread topping comes out clean.
