Ingredients

  • 1 pound lean ground beef
  • 1/2 cup onion, diced
  • 1 large poblano, diced
  • 1 - diced tomatoes
  • 1 - jalapeno, diced
  • 1 teaspoon ea. cumin, ancho chili pwd, gran. garlic, and black pepper
  • 1/4 cup cilantro, fresh, diced
  • 2 - hot links, diced
  • 1 cup frozen corn, thawed
  • 2 - eggs
  • 3 cups colby or cheddar cheese, grated

How To Make cheese lovers mexican meatloaf

  • Step 1
    Remove seeds and chop poblano and jalapeno. Also chop onion, tomatoes, and cilantro. In a large bowl mix together ALL ingredients and 1 c of cheese.
  • Step 2
    On foil, pat out meat into rectangular shape, about 1 1/2 thick. Place 2 c of cheese (reserving remainder for top).
  • Step 3
    Use foil as a guide and beginroll meat up and over cheese. Seal ends of meat well and pat into a rectangle square with a flat top. Using foil, lift meat roll into baking dish, place seam side down. Cover snuggly, bake 350 degrees for 1 hr, uncover, top with cheese and cook 30 min more.
