The first time I made this I was thinking that I will be able to freeze the leftovers for another meal, but the family loves this so much it never made it to the freezer.

    ground beef
  • 2
    red or green bell peppers
  • 1
    onion, chopped
  • 1 can(s)
    nacho cheese soup
  • 1 can(s)
    black olives, sliced
  • 8 oz
    salsa, chunky
  • 1/4 c
  • 2 pkg
    corn muffin, mix
  • 3/4 c
    colby/monterey jack cheese, shredded
  • ·
    tomatoes, chopped

How to Make Cheese & Beef Tamale Pie


  1. In 12" skillet cook ground beef, peppers and onions until meat is brown.
  2. Stir in soup, black olives, salsa and water.
  3. Bring to boiling; reduce heat.
  4. Simmer, uncovered, for 5 minutes and then remove from heat.
  5. Prepare corn muffin mix according to package.
  6. Spread 1/2 into greased 13 x 9 baking pan.
  7. Spoon the hot meat mixture over muffin mix.
  8. Carefully spread remaining corn muffin batter over meat mixture.
  9. Bake at 350 for 30 to 35 minutes until muffin layer is golden.
  10. Top with cheese.
  11. Garnish with olives and tomatoes.
