The first time I made this I was thinking that I will be able to freeze the leftovers for another meal, but the family loves this so much it never made it to the freezer.

Ingredients

  • 2 pounds ground beef
  • 2 - red or green bell peppers
  • 1 - onion, chopped
  • 1 can nacho cheese soup
  • 1 can black olives, sliced
  • 8 ounces salsa, chunky
  • 1/4 cup water
  • 2 packages corn muffin, mix
  • 3/4 cup colby/monterey jack cheese, shredded
  • - tomatoes, chopped

How To Make cheese & beef tamale pie

  • Step 1
    In 12" skillet cook ground beef, peppers and onions until meat is brown.
  • Step 2
    Stir in soup, black olives, salsa and water.
  • Step 3
    Bring to boiling; reduce heat.
  • Step 4
    Simmer, uncovered, for 5 minutes and then remove from heat.
  • Step 5
    Prepare corn muffin mix according to package.
  • Step 6
    Spread 1/2 into greased 13 x 9 baking pan.
  • Step 7
    Spoon the hot meat mixture over muffin mix.
  • Step 8
    Carefully spread remaining corn muffin batter over meat mixture.
  • Step 9
    Bake at 350 for 30 to 35 minutes until muffin layer is golden.
  • Step 10
    Top with cheese.
  • Step 11
    Garnish with olives and tomatoes.
