Carne con Papas (Cuban Beef with Potatoes) is a traditional Cuban recipe. Most families have their own favorite recipe which can vary in which spices and herbs individuals cooks prefer to use. But the basic recipe features cooked beef and tender potatoes in a tasty broth that's bursting with flavor. It can be served by itself as a stew, or if you prefer you can serve it over cooked white rice for a fuller, more rounded meal. Be sure to serve it with some fresh baked Cuban Bread or fresh Cuban Medianoche Bread rolls to soak up the pan sauce.

Ingredients For carne con papas

  • 4 Tbsp
    vegetable oil
  • 1 sm
    green bell pepper, diced
  • 1 md
    onion, diced
  • 3 clove
    garlic, minced
  • 1/2 to 1 Tbsp
    paprika (or to taste)
  • 1 tsp
    ground cumin
  • 2 lb
    beef (stew meat), cubed
  • 1 cup
    tomato sauce
  • 1/2 cup
    white wine
  • 1 1/2 cup
    beef broth (or water
  • 2 lb
    potatoes, peeled and cut into bite-size chunks
  • 2 Tbsp
    capers, rinsed and drained
  • salt, to taste
  • black pepper, to taste
  • OPTIONAL
  • 6 servings
    cooked white rice, to serve (optional)

How To Make carne con papas

    Heat oil in a large skillet over medium heat. Add bell pepper and onion, and sauté for 5 minutes. Then add the garlic, paprika and cumin. Cook for another 3 minutes.

    Add the stew meat and brown on all sides, about 5 minutes.

    Reduce heat to low (or simmer). Stir in the tomato sauce, wine and broth (or water). Cover skillet, and simmer over low heat for 90 minutes or until meat is tender.

    Add the potatoes, and capers. Cook for another 30 minutes or until the potatoes are tender.

    Season with salt and pepper. Serve it in bowls by itself (as a stew), or over cooked white rice.
