Ingredients For carne asada

  • 2 lb
    skirt steak
  • olive oil
  • kosher salt and freshly ground black pepper
  • MARINADE:
  • 4
    garlic cloves, minced
  • 1
    jalapeño chile pepper, seeded and minced
  • 1
    teaspoon freshly ground cumin seed (best to lightly toast the seeds first, then grind them)
  • 1
    large handful fresh cilantro, leaves and stems, finely chopped (great flavor in the stems)
  • 2
    limes, juiced
  • 2
    oranges juiced
  • 1
    lemon juiced
  • 2 Tbsp
    white vinegar
  • 1/2 tsp
    sugar

How To Make carne asada

  • 1
    COMBINE ALL INGREDIENTS IN A 1-GALLON ZIPLOC BAG; CLOSE AND MIX WELL. ADD BEEF (RANCHERA). MARINATE IN BAG UP TO 24 HOURS TURNING AND MASSAGING MEAT FREQUENTLY. GRILL TO MEDIUM-WELL. CUT MEAT INTO 1/2" SLICES (OR CUBES) AGAINST THE GRAIN. SERVE WITH TORTILLAS, MEXICAN RICE AND BEANS. GARNISH WITH LIME WEDGES AND CILANTRO.
