Ingredients
- 2 pounds skirt steak
- - olive oil
- - kosher salt and freshly ground black pepper
- MARINADE:
- 4 - garlic cloves, minced
- 1 - jalapeño chile pepper, seeded and minced
- 1 - teaspoon freshly ground cumin seed (best to lightly toast the seeds first, then grind them)
- 1 - large handful fresh cilantro, leaves and stems, finely chopped (great flavor in the stems)
- 2 - limes, juiced
- 2 - oranges juiced
- 1 - lemon juiced
- 2 tablespoons white vinegar
- 1/2 teaspoon sugar

Step 1COMBINE ALL INGREDIENTS IN A 1-GALLON ZIPLOC BAG; CLOSE AND MIX WELL. ADD BEEF (RANCHERA). MARINATE IN BAG UP TO 24 HOURS TURNING AND MASSAGING MEAT FREQUENTLY. GRILL TO MEDIUM-WELL. CUT MEAT INTO 1/2" SLICES (OR CUBES) AGAINST THE GRAIN. SERVE WITH TORTILLAS, MEXICAN RICE AND BEANS. GARNISH WITH LIME WEDGES AND CILANTRO.
