  • 3.5 lb
    beef roast, lean and boneless
  • 1 tsp
    dry mustard
  • 1/2 tsp
  • 1/2 c
    chopped onion
  • 7.5 oz
    tomato sauce
  • 2 Tbsp
  • 1/2 tsp
  • 1/4 tsp
    freshly ground black pepper

How to Make Calgary Pot Roast


  1. Braising in tomato sauce guarantees tender, flavorful beef.
  2. Trim all fat from roast.
  3. Rub dry mustard and salt into the surface of the meat.
  4. Place in a lightly greased, oven-proof dish.
  5. Top with onion.
  6. Combine tomato sauce, vinegar, thyme and pepper.
  7. Pour over roast and cover tightly.
  8. Bake at 325 for 3 hours until meat is tender.
