We love Cajun food and this sounds good too. I'll make it truly Cajun by adding celery so that it uses the Holy Trinity (onion, bell pepper, celery).

Ingredients

boneless beef chuck roast
1 Tbsp
cajun seasoning
1 9-oz pkg
frozen corn
1/2 c
onion, chopped
1/2 c
green bell pepper, chopped
1 14-oz can(s)
diced tomatoes, undrained
1/4 tsp
pepper
1/2 tsp
hot pepper sauce
1/2 c
celery, chopped, optional

How to Make Cajun Pot Roast With Maque Choux

Step-by-Step

  • 1Rub entire surface of beef roast with Cajun seasoning.
  • 2Place roast in 3 1/2- to 4-quart crock pot.
  • 3Top with onion, corn and bell pepper.
  • 4In small bowl, combine tomatoes, pepper and hot pepper sauce; mix well.
  • 5Pour over vegetables and roast. Cover; cook on
    LOW setting for 8-10 hours.
  • 6To serve, cut roast into slices. Serve corn mixture with slotted spoon.
