We love Cajun food and this sounds good too. I'll make it truly Cajun by adding celery so that it uses the Holy Trinity (onion, bell pepper, celery).

Ingredients
- 2 pounds boneless beef chuck roast
- 1 tablespoon cajun seasoning
- 1 9-oz packages frozen corn
- 1/2 cup onion, chopped
- 1/2 cup green bell pepper, chopped
- 1 14-oz cans diced tomatoes, undrained
- 1/4 teaspoon pepper
- 1/2 teaspoon hot pepper sauce
- 1/2 cup celery, chopped, optional
How To Make cajun pot roast with maque choux

Step 1Rub entire surface of beef roast with Cajun seasoning.

Step 2Place roast in 3 1/2- to 4-quart crock pot.

Step 3Top with onion, corn and bell pepper.

Step 4In small bowl, combine tomatoes, pepper and hot pepper sauce; mix well.

Step 5Pour over vegetables and roast. Cover; cook on LOW setting for 8-10 hours.

Step 6To serve, cut roast into slices. Serve corn mixture with slotted spoon.
