I took my dads basic roast recipe and added cajun seasonings to it. I'll be making this tonight for our sunday supper, along w/ cajun roasted potatoes. Yummy!

Ingredients
- 1 - 2-1/2 lb beef chuck pot roast
- 1 tablespoon cajun seasoning
- 1/2 teaspoon hot pepper sauce
- 1/8 teaspoon pepper
- 1 - 14-1/2 oz can diced tomatoes w/ chiles, undrained
- 1 medium green bell pepper, cut into strips
- 1 medium red bell pepper, cu into strips
- 1 medium yellow bell pepper, cut into strips
How To Make cajun-flavored roast

Step 1trim any fat from meat. W/ fingers, rub cajun seasining into meat. Cut meat to fit into a 4-quart slow-cooker.

Step 2Add hot sauce and pepper to slow-cooker. Pour tomatoes w/ their juice over meat. Cover, cook on low 8-10 hrs, or on high for 4-5 hrs.

Step 3Add peppers the last 30 mins of cook time. Transfer meat to cutting board. Slice and place on a lg platter. drain veggies and serve w/ meat.
