Try this comforting cabbage and beef casserole when you need an easy dinner on a cold day. Cooking the cabbage in beef broth adds a rich, savory flavor to the cabbage. The ground beef mixture is seasoned with onion soup mix, oregano, and garlic powder for a ton of flavor. Mixed with the cooked rice, tomatoes, tomato sauce, and tomato soup, it creates a hearty filling. Layered with the cooked, shredded cabbage, it's a great casserole dinner. If you want to make things a little different, sprinkle shredded cheese on top at the very end of baking.

Ingredients
- 1 - cabbage, medium - large head, shredded 1/2 inch wide
- 3 - beef bullion cubes
- 1 1/2 pounds ground beef (80% lean)
- 2 packages dried onion soup mix (1 oz each)
- 1 can tomato soup (10.75 oz)
- 1 can tomato sauce (15 oz)
- 1 can Italian-style diced tomatoes (14.5 oz)
- 1 cup water
- 1/2 teaspoon crushed oregano
- 1/2 teaspoon garlic powder
- - salt, to taste
- pepper, to taste
- 2 cups white rice, cooked
How To Make cabbage and beef casserole

Step 1Preheat the oven to 325 degrees F. Boil shredded cabbage in 3 - 4 cups of water with 3 beef bouillon cubes. Cook until tender but not mushy. Save about 1/2 cup of flavored water. Drain and set aside.

Step 2In a large Dutch oven, brown ground beef. When nearly done, drain excess grease. Add 2 packages of onion soup mix and stir. Cook until the meat is slightly browned.

Step 3Add tomato soup, tomato sauce, diced tomatoes, and 1 cup of water.

Step 4Add oregano and garlic powder, salt, and pepper to taste. Cook on low-medium heat until slightly bubbling, stir often.

Step 5Fold in cooked rice and set aside.

Step 6In a medium oval roaster or large casserole dish (9x13), line the bottom with cabbage. Spoon flavored water over the cabbage.

Step 7Add the meat and rice mixture over the cabbage.

Step 8Cover and bake in a 325 degree oven for 45 minutes. Cooking time may vary a bit. When done, it should be slightly browned on top.
