This recipe is my husband's FAVORITE recipe. If I allowed him to, he'd make it 365 days a year. It comes from his mother, and it is really good. Just a warning for those who like their Mexican spicy -- this is not very spicy!

Add to Grocery List

1 lb
ground beef
10 1/2 oz
refried beans with sausage
2 c
cheddar cheese
1 can(s)
diced mexican tomatoes (either with chilies or mexican spicing)
head of lettuce
flour tortillas
10 1/2 oz
enchilada sauce
10 1/2 oz
tomato sauce

How to Make Burritos

  • 1Fry ground beef on high. Turn off heat. Add bean and sausage mix, ½ package of cheese, can of Mexican tomatoes, and lettuce to ground beef while meat is still warm. Stir until mixed well.
  • 2Spray a 9 x 13 with non-stick cooking spray. Place flour tortilla in hand, scoop some meat mixture onto flour tortilla, and roll into burrito. Check burrito for filling size (is it too much/too little?) and adjust accordingly. Place newly formed burrito overlapping-edge-side down into pan. Line pan with burritos until meat mix is gone.
  • 3In separate bowl, mix enchilada sauce and tomato sauce. Pour mix evenly over burritos. Cover and bake at 350*F for 40 minute. Sprinkle remaining cheese over top. Bake for another 5 minutes, until cheese is melted.
