Lets remember that when Grandma W says medium coals for that amount of time, what she really means was more like indirect heat where the coals are on the sides of the grill, not grilling the meat directly over the top. If you do grill over the top of the coals, don't grill remotely as long. They you're looking more like 6 min per side for medium. Maybe a tad longer...

Ingredients

  • 1 clove garlic, minced
  • 3 tablespoons oil
  • 1/2 cup dry red wine
  • 2 tablespoons lemon juice
  • 1 teaspoon basil
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon salt
  • 3 pounds chuck roast, 1 1/2 inches thick
  • 2 tablespoons steak sauce

  • Step 1
    Combine garlic, oil, wine, lemon juice, mustard, basil and salt. Prick roast on both sides with long tined fork, place in plastic bag with marinade, and place bag in a deep sided bowl. Marinated overnight in fridge, turning occasionally. Drain but reserve marinade. Add steak sauce to marinade. Remove excess moisture from roast with paper towels. Grill over medium coals 25-30 min on each side for medium doneness. Brush each side with marinade.
