A great one pot meal. You can also put this in a 275 degree oven and let it go all day or a crock pot set on low.

Ingredients

  • 2 pounds boneless chuck roast, cut into 1 inch cubes
  • 1/2 cup whole wheat flour
  • 1, 24 ounces can tomatoes, crushed
  • 1 cup frozen peas
  • 1 cup frozen green beans
  • 3 large carrots, sliced
  • 1 large onion, large dice
  • 3 ribs - celery, chopped
  • 1 teaspoon low sodium beef base disolved in 1 cup of hot water
  • 1 tablespoon worcestershire sauce
  • 1 1/2 teaspoons sea salt
  • 3/4 teaspoon freshly cracked black pepper
  • 1 small bay leaf
  • 8 small red potatoes, unpeeled & quartered
  • 1 cup fresh button mushrooms, sliced

How To Make bunyan's diabetic beef stew

  • Step 1
    Heat the olive oil in a large dutch oven
  • Step 2
    Dredge the cubed beef in the 1/2 cup of w/w flour
  • Step 3
    Brown the beef in the hot oil
  • Step 4
    Add all of the other ingredients, and enough hot water to just cover everything.
  • Step 5
    Bring to a boil, lower heat, simmer slowly until the beef is tender. About 2 hrs
