A great one pot meal. You can also put this in a 275 degree oven and let it go all day or a crock pot set on low.

boneless chuck roast, cut into 1 inch cubes
1/2 c
whole wheat flour
1, 24 oz
can tomatoes, crushed
1 c
frozen peas
1 c
frozen green beans
3 large
carrots, sliced
1 large
onion, large dice
3 ribs
celery, chopped
1 tsp
low sodium beef base disolved in 1 cup of hot water
1 Tbsp
worcestershire sauce
1 1/2 tsp
sea salt
3/4 tsp
freshly cracked black pepper
1 small
bay leaf
8 small
red potatoes, unpeeled & quartered
1 c
fresh button mushrooms, sliced

How to Make Bunyan's Diabetic Beef Stew


  • 1Heat the olive oil in a large dutch oven
  • 2Dredge the cubed beef in the 1/2 cup of w/w flour
  • 3Brown the beef in the hot oil
  • 4Add all of the other ingredients, and enough hot water to just cover everything.
  • 5Bring to a boil, lower heat, simmer slowly until the beef is tender. About 2 hrs
