Ingredients

  • ·
    cooking spray
  • 1 lb
    round steak, cut into 3/4 inch dice
  • 1/3 c
    water
  • 1/2 c
    fresh button mushrooms,sliced
  • 1 pkg
    dry onion soup
  • 1 c
    plain, nonfat yogurt
  • 2 Tbsp
    whole wheat flour
  • 6 oz
    whole wheat egg noodles

How to Make Bunyan's Diabetic 30-Minute Beef Stroganoff

Step-by-Step

  1. In a frying pan sprayed with nonstick cooking spray, brown meat.
  2. Add water, mushrooms and soup mix.
  3. Cover and simmer for 15 minutes. In a small bowl, blend yogurt and flour; add to meat mixture.
  4. Cook and stir on low heat until mixture thickens.
  5. Serve over hot, cooked noodles.
  6. NOTES: For greater flavor with little or no fat added, substitute no fat beef broth or some wine for part of the water called for in the ingredients.
