Bubble Up Enchiladas
1 lbground beef lean
1/2 pkgtaco seasoning
8 oztomato sauce
10 ozcan enchilada sauce (i used the green)
1 can(s)refrigerated biscuits (i use mini grands)
2 cmexican cheese blend
1/2 csalsa for top (i used mild)
1/2green pepper, diced
How to Make Bubble Up Enchiladas
- Preheat oven to 350 degrees. Brown lean ground beef and diced green pepper in a skillet and drain off fat. Add the taco seasoning, enchilada sauce, tomato sauce and 1 cup of cheese. Stir to combine.
- Cut the refrigerated biscuits into fourths and stir them in the meat mixture.
- Spray a 9 x 13 casserole dish with cooking spray and add the mixture. Bake for 25 minutes. Remove from the oven and sprinkle remaining cheese on top. Add about 1/2 cup salsa on top. Bake an additional 10 minutes. Let stand for 5 minutes before serving.
