brothers meatloaf

Several of my brothers love Asian food, yet are die hard meat and potato guys. I came up with this and now I find my car wash,waxed and detailed, lawn mowed, favorite bottle of wine on the table. That's when I know its time to make this. I have my butcher ground up a couple pounds of boneless chicken breast. leaves me enough for additional recipes for the week.

Ingredients
- 1 1/2 pounds ground chuck
- 1/2 pound ground chicken
- 3 medium eggs
- 2 cups crushed ramen noodles
- 4 tablespoons milk, 2%
- 2 medium diced onions
- 2 packages carrot, shredded
- 3 tablespoons ginger paste-in a tube
- 1 tablespoon soy sauce, low sodium
- 2 packages broccoli slaw
- 1 cup sakura -or swiss
- 1 cup water chestnuts
How To Make brothers meatloaf

Step 1Mix the ground meats & 1 T ginger paste, 1 T soy sauce, eggs, milk. Mix thoroughly. Add 1 package of carrots and broccoli slaw, diced onions, dice the chestnuts and add also to this mix. Mix vegetables and remaining ginger paste to meat mixture and mix thoroughly. Crush ramen noodles and mix well with the meat mixture.

Step 2On a sheet pan, place & shape 1/2 of the meat mix into a rectangle. Layer the 1 package of shredded carrots on top, place 1/2 of cheese on top. Layer with rest of meat mix. Spread the broccoli slaw and remaining cheese. top with rest of meat mix. Place in pre heated 375 oven for 15 minutes. Lower temperature to 350 and continue cooking for 35-50 minutes. I like the sheet pan, because I usually put a couple pounds of various mushrooms that I've steamed in a glass pan in the microwave(1/2 inch water, mushrooms, cover with plastic wrap, 2 minutes on med/high) around the loaf absorbing juices-cooked but not soggy.
