Ingredients
- 8 bone in beef short ribs
- salt and pepper
- 3 tablespoons veg oil
- 2 stalks celery, chopped
- 2 medium carrots, chopped
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1/2 cup red wine
- 3 cups beef stock
- 1 sprig rosemary
- 1 sprig fresh oregano
- 1 bay leaf
- 2 tablespoons butter
- 2 tablespoons flour
How To Make braised short ribs with gravy

Step 1Season the ribs with salt and pepper. Add the oil to a Dutch oven. Brown the ribs on all sides. Remove the ribs to a slow cooker. Add the celery, carrots, onions, and garlic to the pan and cook until browned and soft. Add the wine and cook until most of it has evaporated.

Step 2Add to the ribs in the slow cooker. Add the beef broth, rosemary, oregano and bay leaf. Cook on low for 8 hours.

Step 3Remove ribs from the slow cooker. Strain the gravy in a fine mesh strainer. Place in a grease separator and drain off as much grease as possible. Discard grease and solids. Add the butter to a sauce pan then whisk in the flour. Brown the roux for 2 minutes. Add the strained degreased broth to the flour mixture to thicken. Serve the ribs over mashed potatoes covered with the gravy.
