Ingredients

  • 1 lb
    ground beef
  • 1 lb
    ground smoked ham, cooked
  • 1 lb
    pork, ground
  • 3 large
    eggs
  • 2 tsp
    salt
  • 1/2 tsp
    pepper
  • 1/4 tsp
    ground nutmeg
  • ·
    chipotle sauce
  • 1/2 c
    dry bread crumbs
  • 1/4 c
    instant corn tortilla mix
  • 1/2 c
    vegetable oil

How to Make Braised Meat Loaf

Step-by-Step

  1. Mix ground beef, fully cooked ham, ground pork, eggs, salt, pepper and the nutmeg.
  2. Shape into a loaf.
  3. Cover and refrigerate for 1 hour.
  4. Prepare chipolte sauce and set aside.
  5. Mix bread crumbs and tortilla mix.
  6. Coat meat loaf with bread crumb mixture.
  7. Heat oil in 10-inch skillet until hot.
  8. Cook meat loaf in oil over medium heat until brown on all sides.
  9. Pour chipotle sauce over meat loaf.
  10. Heat to boiling and reduce the heat.
  11. Cover and simmer until done; about 1 hour.
