Ingredients
- 3 pounds lean steak
- 3 tablespoons olive oil
- 2 tablespoons minced garlic
- 1/2 - onion, sliced
- 1/2 pound mushrooms, quartered
- 1/4 cup flour
- 1 cup dry red wine
- 2 cups canned tomatoes
- 24 - stuffed green olives
- 1/2 teaspoon thyme
- 1 - bay leaf
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon saffron
- 1/4 cup chopped parsley
How To Make braised beef with tomatoes and herbs

Step 1Trim the meat of all fat and cut into 1 1/2-inch cubes.

Step 2Heat the oil in a pressure cooker until almost smoking.

Step 3Add the beef cubes and cook over high heat, stirring often, until lightly browned all over.

Step 4Add the garlic, onion and mushrooms and stir.

Step 5Sprinkle with the flour and stir to coat the pieces evenly.

Step 6Add the wine, tomatoes, olives, thyme, bay leaf, cayenne and saffron.

Step 7Bring to a boil, stirring well.

Step 8Cover and add the pressure regulator.

Step 9Reduce the heat and cook according to the manufacturer\'s instructions, 20-25 minutes.

Step 10Uncover as directed.

Step 11Pour the beef into a serving dish and sprinkle with the chopped parsley.
