Around here, we love good Mexican food, and this recipe is finally ready to make its debut for the family. I wanted a Mexican Taco Pie made in a pie pan that looks like a real pie. I have never seen one made like this. We love tacos with green sauce. So, I wanted this pie to have all the flavors of a taco with green sauce. However, the bonus is to have fast and ease of preparation in one dish. This recipe accomplishes all of that. So, Chow down, and Enjoy! ~ Bonnie

  • 3 green onions chopped fine and - divided
  • THE TORTILLAS
  • 5 mi rancho brand, organic tortillas, any sturdy tortilla will work

How To Make bonnie's green and spicy taco pie

  • 10 inch, deep dish Pyrex pie pan
    1
Use a 10 inch deep dish pyrex type glass pie pan. We will make this pie in two layers.
  • Mi Rancho brand tortillas
    2
Tear two of the Mi Rancho tortillas into about 1 1/2 inch pieces in one layer, no need to be fussy.
  • 3
As you tear them, use the semi-round edges to go around the sides of the pie to make the side "crust" . It won't be pretty, but that is okay, because you won't see it after it is layered.
  • The Meat Mixture
    4
Next, you will cook the meat. Add ALL of THE MEAT MIXTURE ingredients to the skillet, and over medium heat in a nonstick skillet, fry the meat and the seasonings until it is lightly brown.
  • 5
Tilt the skillet and push the meat back with a spatula, and wipe up any excess grease with a paper towel. Check the amount of salt. Is it to your liking?
  • Green Enchilada Sauce
    6
Turn the burner to low and add one cup or one half of THE GREEN SAUCE to the meat mixture and simmer for about 20 minutes.
  • 7
After it has simmered, pile one half of the meat mixture into the pie pan lined with the tortillas. Spread it out with a spoon, and add one half of the cubed cream cheese and one half of the green onions and half of the grated Mexican 4 cheeses.
  • 8
Repeat the layering with the remaining tortillas, then pour the remaining sauce over the second layer of tortillas and meat mixture.
  • 9
Add the cream cheese cubes, then the grated Mexican 4 cheeses and then top with the green onions. You are ready to bake it!
  • 10
Pop it into a 350 oven for about 30 to 35 minutes until it is nicely brown. Remove from the oven and let it sit for about 10 minutes before serving, so that will allow you to cut it easier. I like it with a dollop of sour cream on my slice. :)
