blue cheese steak and mushrooms over noodles

Rich and delicious. This recipe came from a friend, originally, and I couldn't resist adding mushroms to it. I serve this over pasta but it would also work with rice if you prefer.

Ingredients

  • - olve oil
  • 1 large onion, thinly sliced
  • 2 pounds steak, sliced and cut in bite sized pieces
  • 1/2 cup canned beef broth
  • 2 cups sliced mushrooms
  • 1/2 teaspoon freshly grated nutmeg
  • 1 teaspoon freshly ground black pepper
  • - sea salt to taste
  • 6-8 ounces crumbled blue cheese
  • 1 cup (8 ounces) dairy sour cream
  • - chopped parsley garnish
  • 6 - servings hot, cooked pasta or rice

How To Make blue cheese steak and mushrooms over noodles

  • Step 1
    Heat olive oil in a large skillet. Add onions and cook until translucent. Then add meat. When steak is about half cooked add broth, mushrooms, and nutmeg. Continue to cook until meat is done. Stir in salt and pepper, Add blue cheese and cook just until it melts.
  • Step 2
    Remove from heat. Warm sour cream in the microwave. Stir into beef mixture and serve over pasta (I like wide country style noodles). Garnished with parsley, if desired.
