blue cheese burgers

I first encountered these burgers about 30 years ago when I lived in New Orleans. There was a little hole-in-the-wall restaurant at the edge of the French Quarter (still there, I believe), called Port Of Call. Ingredients

  • 1 1/2 pounds ground chuck
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 ounces blue cheese, crumbled
  • - garnishes: onion and tomato slices

How To Make blue cheese burgers

  • Step 1
    Form the ground chuck into four generous patties and place in a cold 12-inch skillet. Over medium-low heat, cook slowly, adding salt and pepper and turning often.
  • Step 2
    When burgers are almost done to your liking, sprinkle blue cheese over each. Cover and reduce heat to low. Continue cooking just until cheese melts.
  • Step 3
    Serve on toasted buns with the garnish of your choice. They are SO yummy!
