blue cheese and walnut meatloaf

Why not make a simple meal, like meatloaf, an outstanding meal??? That's what I did. Even the kids love it!

Ingredients

  • BLUE CHEESE AND WALNUT FILLING
  • 4 ounces cream cheese, room temp
  • 1/2 cup walnuts, chopped coarse
  • - coarse ground salt and pepper
  • 4 ounces crumbled blue cheese
  • MEATLOAF
  • 2 pounds ground beef (or turkey)
  • 1 cup saltine crumbs
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper
  • 2 - egg
  • 3/4 cup evaporated milk (up to 1 cup)
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon ground coriander

How To Make blue cheese and walnut meatloaf

  • Step 1
    For filling: in a medium bowl stir cream cheese until softened, Mix in walnuts, season with salt and pepper. Fold in blue cheese, breaking it up as little as possible. Set aside until ready to use.
  • Step 2
    For Meatloaf: Combine all meatloaf ingredients. Place on a 12x16 inch piece of wax paper, sprayed lightly with cooking spray, and pat firmly and evenly into a 10x12 rectangle.
  • Step 3
    Spread blue cheese mixture over center of meatloaf, evenly. Spread out to edges as far as possible.
  • Step 4
    Roll up jelly roll style, starting from the short end. Gently lift wax paper and remove as you roll. Seal the ends well and place, seam down into greased baking dish.
  • Step 5
    Bake at 350 for 50-60 minutes or until no pink remains. Allow to stand for 10 minutes before cutting.
