Ingredients

  • 1 1/2 pounds ground chuck
  • 1 - small onion, chopped
  • 1 - small bell pepperm, chopped
  • 10 ounces can blackeyed peas
  • 1 can rotel tomatoes
  • 1 cup grated cheddar cheese
  • 1 package jiffy cornbread mix, blended as package directs

How To Make blackeyed pea casserole

  • Step 1
    Preheat oven to 350 degrees. Saute ground chuck with onion and green pepper. Drain grease and place in cassserole dish.
  • Step 2
    Add peas and tomatoes. Mix well. Top with grated cheese. Pour prepared cornbread mix over top of all.
  • Step 3
    Bake in 350 degree oven for 35 minutes.
