Black Eyed Pea Casserole
1 boxuncle bens long grain and wild rice mix
1 lbground beef
1 mediumonion, chopped
1 mediumbell pepper, chopped
2 can(s)(15 1/2 oz) black eyed peas with jalapenos, rinsed and drained
1 can(s)(10 3/4 oz) cream of mushroom soup
·cheddar cheese, shredded
How to Make Black Eyed Pea Casserole
- Cook the ground beef, onion, and bell peppers over medium heat until meat is no longer pink; drain and set aside.
- Cook wild rice mix according to package directions.
- Combine the beef mixture with the wild rice, soup, and peas. Pour into a greased 2 1/2 quart baking dish.
- Cover and bake at 350* for 25 minutes or until heated all the way through. Uncover and sprinkle with cheese. Bake 5 more minutes so the cheese will melt on top.
