black eyed pea casserole
I wanted to do something besides the same old dry black eyed peas for new years so I made this. Not sure where I got the recipe but it sure was good. My husband loved it.

Ingredients
- 1 box uncle bens long grain and wild rice mix
- 1 pound ground beef
- 1 medium onion, chopped
- 1 medium bell pepper, chopped
- 2 cans (15 1/2 oz) black eyed peas with jalapenos, rinsed and drained
- 1 can (10 3/4 oz) cream of mushroom soup
- - cheddar cheese, shredded
How To Make black eyed pea casserole

Step 1Cook the ground beef, onion, and bell peppers over medium heat until meat is no longer pink; drain and set aside.

Step 2Cook wild rice mix according to package directions.

Step 3Combine the beef mixture with the wild rice, soup, and peas. Pour into a greased 2 1/2 quart baking dish.

Step 4Cover and bake at 350* for 25 minutes or until heated all the way through. Uncover and sprinkle with cheese. Bake 5 more minutes so the cheese will melt on top.
