This is a slow cooker recipe. I first made it for a work potluck in '99 and it was a big hit. It's so good on a cold day. Enjoy!

Ingredients

  • 2 lb
    beef smoked sausage, cut in 1" chunks
  • 3 15oz can(s)
    black beans, drained
  • 1/2 c
    yellow onion, chopped
  • 1/2 c
    celery, chopped
  • 4-5 clove
    garlic, crushed
  • 2 tsp
    thyme, dried
  • 1 1/2 tsp
    oregano, dried
  • 1 1/2 tsp
    black pepper
  • 1/4 tsp
    red pepper flakes or a few dashes of hot pepper sauce
  • 1
    chicken bouillon cube
  • 5
    bay leaves, dried
  • 1 can(s)
    diced tomatoes
  • ·
    hot cooked white or brown rice

How to Make Black Beans and Rice

Step-by-Step

  1. Brown sliced sausage in a skillet. Drain on towels to remove excess fat.
  2. Put all of the ingredients, except rice, into a large slow cooker.
  3. Cover and Cook 8 hours on low or 4 hours on high. Remove bay leaves before serving. Serve over hot cooked white or brown rice. I say this serves 10 or more per recommended servings but a family of 5-6 could easily finish this off if eating large portions.
