black beans and rice

This is a slow cooker recipe. I first made it for a work potluck in '99 and it was a big hit. It's so good on a cold day. Enjoy!

Ingredients

  • 2 pounds beef smoked sausage, cut in 1" chunks
  • 3 15oz cans black beans, drained
  • 1/2 cup yellow onion, chopped
  • 1/2 cup celery, chopped
  • 4-5 cloves garlic, crushed
  • 2 teaspoons thyme, dried
  • 1 1/2 teaspoons oregano, dried
  • 1 1/2 teaspoons black pepper
  • 1/4 teaspoon red pepper flakes or a few dashes of hot pepper sauce
  • 1 - chicken bouillon cube
  • 5 - bay leaves, dried
  • 1 can diced tomatoes
  • - hot cooked white or brown rice

How To Make black beans and rice

  • Step 1
    Brown sliced sausage in a skillet. Drain on towels to remove excess fat.
  • Step 2
    Put all of the ingredients, except rice, into a large slow cooker.
  • Step 3
    Cover and Cook 8 hours on low or 4 hours on high. Remove bay leaves before serving. Serve over hot cooked white or brown rice. I say this serves 10 or more per recommended servings but a family of 5-6 could easily finish this off if eating large portions.
