Black Beans and Rice

This is a slow cooker recipe. I first made it for a work potluck in '99 and it was a big hit. It's so good on a cold day. Enjoy!

2 lb
beef smoked sausage, cut in 1" chunks
3 15oz can(s)
black beans, drained
1/2 c
yellow onion, chopped
1/2 c
celery, chopped
4-5 clove
garlic, crushed
2 tsp
thyme, dried
1 1/2 tsp
oregano, dried
1 1/2 tsp
black pepper
1/4 tsp
red pepper flakes or a few dashes of hot pepper sauce
chicken bouillon cube
bay leaves, dried
1 can(s)
diced tomatoes
hot cooked white or brown rice

How to Make Black Beans and Rice


  • 1Brown sliced sausage in a skillet. Drain on towels to remove excess fat.
  • 2Put all of the ingredients, except rice, into a large slow cooker.
  • 3Cover and Cook 8 hours on low or 4 hours on high. Remove bay leaves before serving. Serve over hot cooked white or brown rice. I say this serves 10 or more per recommended servings but a family of 5-6 could easily finish this off if eating large portions.
