betty's meat loaf
This meatloaf brings back fond memories of everyone sitting around the dinner table together when I was a young girl. We always had meatloaf at least once a week and for some reason mother thought you had to have mashed potatoes and string beans. Not corn or other vegetables, it was all ways string beans (green beams). Now I seem to do the same. I changed this up abit and put potatoes on top and heaven forbit, I used instant potatoes. Hungry Jack Only!! no other will do

Ingredients
- 2 pounds ground beef, chuck or sirloin
- 1/2 medium onion chopped in small pieces
- 1/2 medium green bell pepper chopped in small pieces
- 1 large egg, beaten
- 1 - envelope beefy mushroom onion dry soup mix
- 3 - slices white bread
- cup 3 to 4 cups hungry jack mashed potatoes
- - shredded cheddar cheese
- 5 slices 5 or 6 slices cooked chopped bacon
How To Make betty's meat loaf

Step 1Put meat in large bowl with onipns and bell pepper. Take the 3 slices of bread and run under a little water and add to meat mixture. ( the wet bread makes it easier to mix into meat). Then add soup mix and egg. Salt and black pepper.

Step 2Mix well and put into a glass baking dish sprayed with Pam. Let meatloaf cook about 45 minutes at 350 to 375 or until no longer pink when knife is inserted into middle of meatloaf. Remove from oven and pour off any grease around the sides of pan. Put mashed potatoes on top and sprinkle with cheese. Add bacon and return to oven until cheese is melted and bubbly

Step 3I only use Hungry Jack Instant potatoes. No other will do. And I add extra butter to potatoes, salt and pepper.
