Creamy groundbeef, mushrooms, bacon and cannellini beans with peas. A cheap and cheerful meal that cooks in 20 minutes. Not a traditional stroganoff, but delicious and fantastic for busy nights. The leftovers reheat beautifully the next day. I hope you enjoy this as much as our family do.

Ingredients For betty's complete meal creamy stroganoff

  • oil
  • 1
    onion, diced small
  • 1 tsp
    minced garlic
  • 2 lb
    lean ground beef
  • 8 - 12
    mushrooms, sliced
  • 4 - 6
    bacon rashers, diced
  • 1 can
    cream of mushroom soup
  • 1/2 c
    tomato paste
  • 1 c
    frozen peas
  • 1 can
    cannellini beans, well rinsed
  • 2 tsp
    Worcestershire sauce
  • 1/2 - 3/4 c
    sour cream (I use low fat)

    In a large skillet, heat a little oil. Add the onion and soften. Add the garlic and saute 1 minute.

    Add the meat and brown while breaking up any large clumps.

    Add the mushrooms and bacon. Cook for about 2 minutes and add the garlic, cook until fragrant.

    Add everything soup and tomato paste. Stir until well combined.

    Add the peas, beans and Worcestershire sauce. Simmer for 5 minutes.

    Remove from the heat and stir through sour cream. Serve with your choice of cards.
