best and easiest sunday beef pot roast
I found this recipe on Allrecipes.Today I cooked it for the first time, exactly as it reads. I cooked it in my black iron dutch oven. I was surprised how great it turned out. My husband said "This roast is great and so tender !!" Don't change anything on the recipe.I have it filed in "Definitely will use again !!" folder. BEST AND EASIEST.. The recipe said it is best to make it a day ahead, reheat and serve with oven roasted vegetables, potatoes, carrots,onions, or your favorite side dish. There's not much left and... only my husband and I ate it. If there are left overs tomorrow..it will be great in a sandwich.

Ingredients
- 2 tablespoons olive oil
- 4 pounds boneless chuck roast
- 1 - onion, chopped
- 2 cloves garlic, minced
- 2 - bay leaves
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper

Step 1Preheat oven to 325 degrees F.

Step 2Heat a heavy Dutch oven on top of the stove on medium high heat. Add oil,and sear meat in the center of the pan for 4 minutes. Turn meat over with tongs. sear all sides for 3-4 minutes on each side. Remove meat from pan. Arrange chopped onion,garlic, and one bay leaf in the bottom of the pan, and sprinkle with salt and pepper. Return meat to pan to rest on onion, garlic and bay leaf. Place the second Bay Leaf on top of the meat and put lid on Dutch oven.

Step 3Cook in oven 30 minutes at 325 degrees F. Reduce the heat to 300 degrees F. and cook 1 1/2 hours. Remove roast to a platter to rest for 10-15 minutes. Slice, and top with onions and gravy.

Step 4FOLLOW DIRECTIONS EXACTLY AND YOU WILL HAVE A WONDERFUL ROAST.
