It's like a stuffed bell pepper without all that hassle!

Ingredients

1 lb
ground beef
1/3 c
finely chopped bell pepper
1/3 c
finely chopped onion
1/2 c
uncooked rice
2 c
hot water
6 oz
can tomato paste
1 1/2 tsp
salt
1/4 tsp
pepper

How to Make Bell Pepper Casserole

Step-by-Step

  • 1Heat oven to 350.
  • 2Brown meat over medium heat in a large skillet; drain fat and crumble with fork.
  • 3Add bell pepper and onion to meat and stir to combine.
  • 4Add rest of ingredients**. Stir till well mixed. Pour into a 2-Quart baking dish with a lid. Cover and bake 1 hour.
  • 5** When adding the rest of the ingredients, I always put them in a bowl first & mix together before adding to the meat mixture.
