Ingredients

  • 1 lb
    ground beef
  • 1/3 c
    finely chopped bell pepper
  • 1/3 c
    finely chopped onion
  • 1/2 c
    uncooked rice
  • 2 c
    hot water
  • 6 oz
    can tomato paste
  • 1 1/2 tsp
    salt
  • 1/4 tsp
    pepper

How to Make Bell Pepper Casserole

Step-by-Step

  1. Heat oven to 350.
  2. Brown meat over medium heat in a large skillet; drain fat and crumble with fork.
  3. Add bell pepper and onion to meat and stir to combine.
  4. Add rest of ingredients**. Stir till well mixed. Pour into a 2-Quart baking dish with a lid. Cover and bake 1 hour.
  5. ** When adding the rest of the ingredients, I always put them in a bowl first & mix together before adding to the meat mixture.
