When my son came home from Afghanistan for 2 weeks of R & R, this was the first thing he asked for! A true favorite, discovered on the benches from other softball moms during practices and games.

Ingredients

  • 3-5 pounds beef roast
  • 1 jar pepperoncini peppers
  • 4-5 bottles beer, not lite, enough to cover
  • 1-2 package loaves of crusty, french bread

How To Make beer meat (kids' name for it) or easy italian beef

  • Step 1
    As soon as you finish dinner the night before... Put beef roast and peppers (with juice) in crock pot. I use a double size crock pot, but my daughter makes it with a regular size crock pot and a 1 pound roast.
  • Step 2
    Cover it with the beer, and don't touch it till the morning. Simmer on low.
  • Step 3
    In the morning, don't touch unless it needs more liquid. then, add more beer to cover the meat.
  • Step 4
    At supper, you take out the roast and peppers for serving. Since the beer acts as a tenderizer, it may be easier just to pour it all into a strainer to get rid of the liquid. Make sandwiches with the beef on the crusty bread, and serve the peppers as a side. They will pop with the liquid inside! Enjoy!
