    zucchini, thinly sliced
  • 1
    onion, sliced
  • 2 Tbsp
  • 1/4 c
    parmesan cheese, grated
  • 1.5 lb
    ground beef
  • 1 Tbsp
  • 1 tsp
  • 5/8 tsp
  • 2/3 c
  • 1/4 c
    parmesan cheese, grated

How to Make Beef Zucchini Casserole


  1. In large skillet, saute zucchini and onion in butter until onion is tender. Pour into baking dish (10x6x1 1/2"); sprinkle with 1/4 cup parmesan cheese; set aside.
  2. In same skillet, brown ground beef; drain excess fat.
  3. Stir flour, salt, pepper, then ketchup into meat.
  4. Spoon meat mixture evenly over zucchini.
  5. Cover; bake in 350 oven 20 minutes.
  6. Remove cover; top with 1/4 cup parmesan cheese; bake, uncovered, and additional 5 minutes or until cheese is lightly browned.
  7. Cut into squares to serve.
