Ingredients
- 4 cups zucchini, thinly sliced
- 1 - onion, sliced
- 2 tablespoons butter
- 1/4 cup parmesan cheese, grated
- 1.5 pounds ground beef
- 1 tablespoon flour
- 1 teaspoon salt
- 5/8 teaspoon pepper
- 2/3 cup ketchup
- 1/4 cup parmesan cheese, grated
How To Make beef zucchini casserole

Step 1In large skillet, saute zucchini and onion in butter until onion is tender. Pour into baking dish (10x6x1 1/2\"); sprinkle with 1/4 cup parmesan cheese; set aside.

Step 2In same skillet, brown ground beef; drain excess fat.

Step 3Stir flour, salt, pepper, then ketchup into meat.

Step 4Spoon meat mixture evenly over zucchini.

Step 5Cover; bake in 350 oven 20 minutes.

Step 6Remove cover; top with 1/4 cup parmesan cheese; bake, uncovered, and additional 5 minutes or until cheese is lightly browned.

Step 7Cut into squares to serve.
