Ingredients

  • 4 cups zucchini, thinly sliced
  • 1 - onion, sliced
  • 2 tablespoons butter
  • 1/4 cup parmesan cheese, grated
  • 1.5 pounds ground beef
  • 1 tablespoon flour
  • 1 teaspoon salt
  • 5/8 teaspoon pepper
  • 2/3 cup ketchup
  • 1/4 cup parmesan cheese, grated

How To Make beef zucchini casserole

  • Step 1
    In large skillet, saute zucchini and onion in butter until onion is tender. Pour into baking dish (10x6x1 1/2\"); sprinkle with 1/4 cup parmesan cheese; set aside.
  • Step 2
    In same skillet, brown ground beef; drain excess fat.
  • Step 3
    Stir flour, salt, pepper, then ketchup into meat.
  • Step 4
    Spoon meat mixture evenly over zucchini.
  • Step 5
    Cover; bake in 350 oven 20 minutes.
  • Step 6
    Remove cover; top with 1/4 cup parmesan cheese; bake, uncovered, and additional 5 minutes or until cheese is lightly browned.
  • Step 7
    Cut into squares to serve.
