  • 1 lb
    ground beef
  • 1 medium
    onion, chopped
  • 1 clove
    garlic, minced
  • 10 oz
    package frozen mustard greens or turnip greens, thawed
  • 1 tsp
  • 1/4 tsp
    black pepper
  • 1/4 c
    lemon juice
  • 1 tsp
  • 1/4 tsp
  • 2
    hard-cooked eggs, sliced

How to Make Beef with Mustard Greens


  1. In a deep 10-inch skillet cook the bacon until it is crisp. Remove from the skillet and drain on paper towels. Reserve the drippings.
  2. To the drippings, add the beef, onion, and garlic. Cook till the meat is brown and the onion is tender but not brown. Drain off the fat.
  3. Stir in the thawed greens, salt, and pepper. Cover and simmer the mixture for 10 minutes.
  4. For the sauce, stir together the bacon pieces, lemon juice, sugar, and paprika.
  5. To serve, transfer the meat mixture to a heated serving platter. Garnish with the egg slices. Garnish with the sauce.
