Ingredients

  • 1 lb
    beef sirloin, boneless cut into strips
  • MARINADE INGREDIENTS

  • 2 tsp
    cornstarch
  • 1.5 Tbsp
    dry sherry
  • 2 Tbsp
    soy sauce
  • 3 Tbsp
    peanut oil
  • 1/2 lb
    asparagus, sliced diagonally
  • ·
    "just a pinch" of salt
  • 3 Tbsp
    chicken broth

How to Make Beef with Asparagus

Step-by-Step

  1. Coat beef thoroughly.
  2. Marinate 10 minutes.
  3. Heat 1 1/2 tablespoons peanut oil in a wok over a high flame and stir-fry the beef long enough to brown it lightly.
  4. Remove from wok and drain.
  5. In the remaining 1 1/2 tablespoons of oil, stir-fry the asparagus for a few seconds to coat it.
  6. Add salt and chicken broth and boil until the asparagus is tender-crisp (about 1 minute).
  7. Add the beef and toss it with the asparagus to combine them.
  8. Serve the beef immediately.
