Beef with Asparagus

1 lb
beef sirloin, boneless cut into strips


2 tsp
1.5 Tbsp
dry sherry
2 Tbsp
soy sauce
3 Tbsp
peanut oil
1/2 lb
asparagus, sliced diagonally
"just a pinch" of salt
3 Tbsp
chicken broth


1Coat beef thoroughly.
2Marinate 10 minutes.
3Heat 1 1/2 tablespoons peanut oil in a wok over a high flame and stir-fry the beef long enough to brown it lightly.
4Remove from wok and drain.
5In the remaining 1 1/2 tablespoons of oil, stir-fry the asparagus for a few seconds to coat it.
6Add salt and chicken broth and boil until the asparagus is tender-crisp (about 1 minute).
7Add the beef and toss it with the asparagus to combine them.
8Serve the beef immediately.
