Ingredients

  • 1 1/2 pounds petite shoulder or beef stew, cut into bite-sized pieces
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon woodfired garlic powder
  • 2 - 3 tablespoons olive oil
  • 1 medium yellow onion, chopped
  • 1 medium green bell pepper, chopped
  • 3 cloves garlic, minced
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon dried marjoram
  • 2 1/2 cups low-sodium beef brother (reserve ½ cup)
  • 1 1/2 tablespoons Worcestershire sauce
  • 2 bay leaves
  • 2 tablespoons corn starch
  • 4 cups cooked jasmine or basmati rice
  • chopped fresh parsley

How To Make beef tips and rice

  • Step 1
    Whisk the flour, salt, black pepper, and garlic powder in a shallow, wide bowl. Dredge the beef in the flour mixture.
  • Step 2
    Heat 1 1/2 tablespoons olive oil in a Dutch oven or large pot over medium heat. Brown the beef tips, working in batches. Transfer the browned beef to a plate and cover to keep warm.
  • Step 3
    If needed, add more olive oil. Cook the onion over medium heat for 4-5 minutes.
  • Step 4
    Add the bell pepper and cook until the onion and bell pepper are soft. Reduce the heat to low and add the garlic, thyme, rosemary, and marjoram.
  • Step 5
    Return the beef to the pot with the vegetable mixture.
  • Step 6
    Add 2 cups of beef broth, Worcestershire sauce, and bay leaves.
  • Step 7
    Simmer for 1 1/2 hours or until tender. Or place the covered pot in the oven at 350 degrees for 1 1/2 hours or until tender.
  • Step 8
    Whisk 1/2 cup beef broth with the corn starch.
  • Step 9
    Stir it into the pot and cook until thickened. Serve over cooked rice. Season with salt and freshly ground black pepper to taste.
