Ingredients

  • - 2 lbs. tenderloin, in a single cut
  • - salt and pepper
  • - 3 t. butter
  • - 1 small onion, finely chopped
  • - 1 clove garlic, finely chopped
  • - 1 cup water
  • - 1/2 cup dry white wine
  • - 1 oz. bittersweet chocolate, finely grated
  • - 2 t. finely chopped parsley

How To Make beef tenderloin with chocolate

  • Step 1
    Season beef generously with salt and pepper. Brown the beef in butter in large skillet over high heat until sealed all over, 8 to 10 minutes. Add onion and garlic and saute over medium heat until onion has softened, about 5 minutes. Pour in the water and wine. Cover and simmer over low heat for 15 minutes. Add the chocolate and simmer until tender, 15 to 30 minutes more. Slice beef finely and sprinkle with the parsley. Serves 4 to 6 The Golden Book of Chocolate
