Ingredients
- 1/2 pound ground beef
- 2 cups cheddar cheese, shredded
- 1/2 ounce cornbread mix
- 2 - eggs
- 12 ounces chunky salsa
- 1 tablespoon chili powder
- 7 ounces whole kernel corn
How To Make beef tamale pie

Step 1Heat oven to 450.

Step 2Coat 12x8x2-inch baking dish with nonstick cooking spray.

Step 3Saute beef in skillet over medium heat, breaking up clumps with wooden spoon, 3-4 minutes or until no pink remains.

Step 4Reserve 1 cup cheese for topping.

Step 5Mix together remaining cheese, corn muffin mix, eggs, salsa, chili powder, corn, beef and 2 cups water until smooth.

Step 6Scrape into prepared dish.

Step 7Bake for 20 minutes.

Step 8Sprinkle on cheese.

Step 9Bake 5 minutes, until knife inserted in center test clean.

Step 10Let stand 10 minutes.
