Ingredients

  • 1/2 lb
    ground beef
  • 2 c
    cheddar cheese, shredded
  • 1/2 oz
    cornbread mix
  • 2
    eggs
  • 12 oz
    chunky salsa
  • 1 Tbsp
    chili powder
  • 7 oz
    whole kernel corn

How to Make Beef Tamale Pie

Step-by-Step

  1. Heat oven to 450.
  2. Coat 12x8x2-inch baking dish with nonstick cooking spray.
  3. Saute beef in skillet over medium heat, breaking up clumps with wooden spoon, 3-4 minutes or until no pink remains.
  4. Reserve 1 cup cheese for topping.
  5. Mix together remaining cheese, corn muffin mix, eggs, salsa, chili powder, corn, beef and 2 cups water until smooth.
  6. Scrape into prepared dish.
  7. Bake for 20 minutes.
  8. Sprinkle on cheese.
  9. Bake 5 minutes, until knife inserted in center test clean.
  10. Let stand 10 minutes.
