Ingredients
- 1/2 pound chuck roast
- 1 tablespoon butter
- 1/2 tablespoon salad oil
- 1/2 pound mushrooms, sliced
- 2 tablespoons onion, finely chopped
- 1/4 teaspoon salt
- 1/4 teaspoon worcestershire sauce
- 1/4 - paprika
- - "just a pinch" of pepper
- 1/4 cup sour cream
- - parsley
How To Make beef stroganoff for 1

Step 1Discard bone and fat from meat and cut into thin, bite-size strips.

Step 2Heat 1/2 tablespoon of the butter with the oil in frying pan over medium-high heat.

Step 3Add mushrooms and onion and cook, stirring until golden.

Step 4Lift out and set aside.

Step 5Add remaining 1/2 tablespoon of butter to pan.

Step 6Add beef strips and cook over high heat, turning meat and shaking pan, just until browned.

Step 7Remove pan from heat, stir in reserved mushroom-onion mixture, salt, worcestershire, paprika, pepper and sour cream.

Step 8Return pan to low heat and cook, stirring constantly, just until sauce is heated through--do not boil.

Step 9Sprinkle with parsley.

Step 10Serve over noodles or rice.
