Ingredients

  • 1.5 pounds beef sirloin, boneless cut into strips
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 - onion thinly sliced
  • 4 tablespoons butter
  • 2 tablespoons flour
  • 1 cup beef stock
  • 1 teaspoon dijon mustard
  • 1/4 cup sour cream

How To Make beef stroganoff

  • Step 1
    Spread beef strips on a baking sheet, sprinkle with salt and pepper, top with onion slices and let stand at room temperature for 2 hours.
  • Step 2
    Melt 2 tablespoons butter in a skillet and stir in flour.
  • Step 3
    Mix in stock and heat, stirring until thickened.
  • Step 4
    Blend in mustard and remove from heat.
  • Step 5
    In another skillet, melt remaining butter, add beef and onion and saute until browned.
  • Step 6
    Add the beef (but not the onion) to the sauce and simmer 15 minutes.
  • Step 7
    Remove from heat and stir in sour cream (at room temperature).
  • Step 8
    Serve onions separately or reserve for another use.
