Beef Strips and Carrots

1 lb
2/3 c
carbonated soda water
1 c
white wine
1 tsp
1/4 tsp
1 lb
sirloin steak
2 Tbsp
vegetable oil
2 small
onions, diced
1/4 tsp
white pepper
1/2 c
heavy cream
1 Tbsp
chopped parsley


1Peel carrots and cut into thin slices (crosswise at a slant).
2Place in a saucepan with the soda water, wine, 1/2 teaspoon salt and sugar.
3Cover and simmer for 25 minutes or until tender.
4Meanwhile cut the meat into very thin slices.
5Heat the vegetable oil and saute the onions about 5 minutes.
6Add the beef slices; cook for 5 minutes, stirring often.
7Season with 1/2 teaspoon salt and 1/4 teaspoon pepper.
8Add the meat and onions to the carrots.
9Mix carefully.
10Stir in the cream.
11Heat through but DO NOT boil.
12Correct seasonings if necessary.
13Sprinkle with chopped parsley and serve.
